At the beginning of June my flatmate, Pete, made the most amazing cheesecake I’ve ever tasted. (Perhaps with the exception of those really really tangy lemon cheesecakes you occasionally get!) He made two in the same week and at the same time each morning Abi and I would meet in the hall way and realise we were both trying to surreptitiously have cheesecake for breakfast! This lasted almost a week and we didn’t only eat it for breakfast. We also ate it at lunch, after lunch, before dinner, after dinner…you get the picture! So when he moved out last week I begged him to leave to recipe. Of course, being a typical male, he forgot, but luckily he sent the instructions in an email earlier on and I thought I would share it with everyone! So, I have copied and pasted his exact words in from the email. (I therefore take no responsibility should it go wrong!)

Ingredients
200ml Philadelphia
250ml Mascarpone
200g White Chocolate
250ml Double Cream
Strawberries – cut up into small chunks
Optional Biscuit Base:
Digestive Biscuits (crushed by flatmate with rage issues)
Margarine/Butter melted
Recipe
The secret to this recipe is to not try very hard.
Break up the chocolate and stick it in the microwave until its fully melted. Then add everything else. Then stir.
Also note that quantities of ingredients are totally arbitrary – just use what you have. (When the recipe has this many calories you really can’t go wrong.)
For the biscuit base it’s best to wait for someone to annoy your flatmate then ask them to crush the biscuits for you (remember, don’t try very hard). You can reward your flatmate by giving them biscuits and as an optional extra you can lie about the biscuits suiting their dietary requirements.
Melt some margarine and then mix with the biscuits so that it all sticks together and use as a base.

It looks very simple and I shall of course be trying it very soon (before and after a complete starvation as it looks entirely calorific!) I can only assume that his references to flatmates with rage issues are directed at myself and Abigail but I can say that we are both calm and serene all the time! I am also shocked and appalled that he lied about the biscuits having special dietary requirements. (He promised me they were wheat free!)

Did he forget the sugar or is there none in it?
Nope, there’s no actual sugar in it. Which is probably a good job considering everything else that is in there. The chocolate makes it sweet enough!

Is there any baking involved? was it solidified by refrigeration? cos it looked abit runny.. haha..
Yeah, it’s best left overnight but usually my housemates and I only wait a few hours because we can’t wait!!!
